BRIYANI 'DHAM' BUHARI
Aromatic moghul basmathi rice drenched in spices, cooked over a low-flame. The rice is tightly covered with
banana leaf to seal in the aroma. The tightly closed pot is covered with charcoal to ensure the rice is
tenderly cooked inside out for 3 hours. This unique 'dham' preparation method is what makes Briyani 'Dham'

FISH HEAD CURRY (Kari Kepala Ikan)
A feast is never complete the Malaysian style without enjoying the aromatic spice-rich fish head curry.
A large fish head is freshly cooked with spices, curry, chillies, lady fingers, brinjal and other condiments
and served in the traditional claypot, and best savoured with rice or bread.
BEEF KANDAR
Beef pieces cooked tenderly in a thick black sauce in the traditional kandar (north-Malaysian Indian Muslim)
style where a variety of different curries (chicken, seafood, fish, etc) are added to bring out the unique taste.
ROJAK BAWAH POKOK
An all-time Malaysian favourite, this simple snack is made up of a variety of crispy crackers, tofu and
vegetable cake, topped generously with shredded cucumber and watercress. A sweet and lightly spicy peanut
sauce is poured over just before serving to bring all the ingredients flavour together.
